Chicken soup is a winter staple in a lot of households; I know my house is one of them. I love the smell of it cooking in my house, but I don’t love how long it can usually take. So here’s, my quick and easy homemade chicken soup in less than 60 minutes! Bonus: My recipe is also gluten free.
Here’s what you’ll need:
- 2 Boxes of Gluten Free Chicken Stock
- 1 Rotisserie chicken
- Carrots
- Celery salt
- Minced onion
- 1 tsp Minced or Chopped Garlic
- EVOO
- 1 cup of Gluten Free pasta
Next, are the easiest steps to your quick and easy homemade chicken soup.
Step 1: Start with 2 quick swirls of EVOO (Extra Virgin Olive Oil) around the pot and add in your minced garlic and onion. While that is browning, slice up your fresh carrots ( I use 4 whole carrots).
Step 2: Once the EVOO, garlic and onion are good to go, add in your sliced carrots. Simmer your carrots for about 5 minutes. During this time, I also add in my celery salt. I’m not a celery eater but love the flavor it gives (add in your celery if opting for the vegetable).
Step 3: Next, pour in your chicken stock. I have made this with chicken broth, but I love the way the stock has more flavor. You may use either one.
Let the chicken stock and carrots simmer and come to boil. It should take about 5 minutes.
Step 4: After the chicken stock comes to a boil, pour in your pasta/noodles. I have made my soup with shells and elbows. Since learning I need to eat gluten free, my pasta ‘shapes’ have become limited.
While your pasta is cooking, shred rotisserie chicken. I love the fact that it is already cooked and flavored. Easy peasy!
Step 5: Once the pasta begins to become a little tender (about 5 minutes in or so), add in your chicken.
Step 6: Lastly, while your chicken is now simmering and blending in with the delicious flavors, pasta and vegetables, clean up any mess that you may have.
I let my soup simmer for another 10-15 minutes.
And that’s it! Your delicious, easy homemade chicken soup made in less than 60 minutes. Healthy and full of flavor!
